茶叶中的多种生物活性成分对人类各种疾病有预防作用。黑茶属于茶叶中的一种,有着茶叶所共有的生化特征,而黑茶在原料选取、加工工艺等方面有别于其它茶,所以它的生化成分的组成和比例具有与众不同的特点和优势。随着全球癌症发病率的不断攀升,黑茶抗癌作用的研究成为一个重要的课题。本文从黑茶中茶多糖、茶多酚、茶红素和茶黄素对抑制癌细胞增值和促进癌细胞凋亡方面的研究进行了综述。
